Roll up these coconut crepes for breakfast! These are great for the little hands to pick up and serve it with your favorite jam, maple syrup or peanut butter.
In a large mixing bowl, beat together ingredients just until combined.
In a pan, heat it up on low-medium heat with just enough butter to coat the pan.
Drop 1/4 cup batter on the pan and spread the batter in a circular motion with the back of a Tablespoon.
Let it cook for 1-2 mins and flip to the other side with a flat spatula.
Let it cook for another 1-2 mins and place on plate, repeat above until batter is finished.
Serve warm with maple syrup, jam or peanut butter.
