Roll up these coconut crepes for breakfast! These are great for the little hands to pick up and serve it with your favorite jam, maple syrup or peanut butter.

These coconut crepes are one of my family's favorite weekend breakfast ! They are perfect when served warm alongside with maple syrup, jam or peanut butter. Make them smaller and roll them up for the little ones to pick up easily.

 ½ cup all purpose flour
 1 tsp sugar
 2 eggs
  cup coconut milk, canned
 1 tsp vanilla extract
 1 tbsp butter, melted
 23 tsp butter, melted (for cooking)

In a large mixing bowl, beat together ingredients just until combined.

In a pan, heat it up on low-medium heat with just enough butter to coat the pan.

Drop 1/4 cup batter on the pan and spread the batter in a circular motion with the back of a Tablespoon.

Let it cook for 1-2 mins and flip to the other side with a flat spatula.

Let it cook for another 1-2 mins and place on plate, repeat above until batter is finished.

Serve warm with maple syrup, jam or peanut butter.
